Professor Sleight: The priorities are: reducing weight; not feeding people so much; increasing the vegetable intake in preference to meat - we cannot sustain the meat production on this planet, we are killing ourselves with CO2; and also reducing salt in food which can be done gradually with no problem to the population. Traditionally the Chinese have very high dietary salt intakes and that’s why stroke is such a big problem in the Chinese population compared to the rest of the world and if approached steadily and progressively, salt intake reductions can be achieved.
